Basic Pasta Dough Recipe
There are four versions here representing how many eggs are in the dough. Each version determines how much dough you have by the pound, approximately.
One Egg Pasta
(2 servings, about ½ pound)
3/8 cup unbleached all-purpose flour
1/8 cup +2 tablespoons 00 pasta flour
1/8 cup +2 tablespoons durum semolina flour
1 egg
¼ teaspoon salt
½ tablespoon olive oil
½ tablespoon lukewarm water
Two Egg Pasta
(3-4 servings, about 3/4 pound)
¾ cup unbleached all-purpose flour
3/8 cup 00 pasta flour
3/8 cup durum semolina flour
2 eggs
½ teaspoon salt
¾ tablespoon olive oil
¾ tablespoon lukewarm water
Three Egg Pasta
(5-6 servings, about 1 pound)
1-1/8 cup unbleached all-purpose flour
½ cup +1 tablespoon 00 pasta flour
½ cup +1 tablespoon durum semolina flour
3 eggs
¾ teaspoon salt
1 tablespoon olive oil
1 tablespoon lukewarm water
Four Egg Pasta
(7-8 servings, about 1-1/2 pound)
1-1/2 cup unbleached all-purpose flour
¾ cup 00 pasta flour
¾ cup durum semolina flour
4 eggs
1 teaspoon salt
1-1/2 tablespoon olive oil
1-1/2 tablespoon lukewarm water
Place all the ingredients in a food processor with a steel blade. Pulse until dough resembles coarse corn meal and the dough sticks together when pressed between your fingers.
